Stuffed eggs

Today’s recipe, a memorable component of our summer picnic lunches in Hungary, is introduced by a guest contribution from your father, king of the holiday morning routine. He has thrown in as many original Hungarian words as he can muster – presumably in a bid to convince the Consulate that he knows enough of theContinue reading “Stuffed eggs”

Greek salad

As a Classics student with a convenient bolt-hole at the British embassy in Athens, I spent several of my long university summer holidays in Greece, often travelling alone. My go-to evening meal at any local taverna (in Patmos, say, or Loutro or Porto Rafti) was Horiatiki or ‘garden’ salad (Χωριάτικη σαλάτα) washed down with aContinue reading “Greek salad”

Potato salad

A homemade potato salad is infinitely preferable to anything you can buy in a shop, although you should feel no guilt about using ready-made mayonnaise, as you might for this dish’s close relative, tartare sauce. The main difference between the latter and this recipe is that I use spring onions here to bump up theContinue reading “Potato salad”

Thai beef salad

This meets the qualification for inclusion because it has gone down a storm on the three occasions I’ve made it: first at The Ridge one Boxing Day (maybe 15 years ago); then last year, mid-pandemic, at Granny’s flat in Putney; and, most recently, to celebrate the February birthdays in 2021. My go-to recipe comes fromContinue reading “Thai beef salad”

Thai prawn curry

Back when we were in living in Tarleton Gardens, your father and I had a brief flirtation with Ian Marber’s Food Doctor Diet. Like all ‘diets’ the restrictions proved unsustainable in the long term, but one of Marber’s recipes took root. This green Thai curry, originally a recipe for monkfish, is a vehicle for allContinue reading “Thai prawn curry”

Salade Niçoise

Like ratatouille, and as you can tell from its name, Salade Niçoise comes from Nice. The version we eat has several inauthentic elements (potatoes? lettuce? cucumber?), or so Antonia was told by the French teacher who assessed her at 11+. It is a firm family favourite, and the reason you all learned to make aContinue reading “Salade Niçoise”

Tabouleh

Another Levantine dish with disputed spelling (see hummus) and fluid composition, tabouleh is a quick, cheap vegetarian salad or mezze that makes a great accompaniment to a summer barbecue. It often includes tomatoes, although our version doesn’t. Don’t be alarmed by the large quantity of herbs – they’re what give the salad its distinctive colour.Continue reading “Tabouleh”

Caesar Salad

Delia Smith’s Summer Collection, published in 1993 and followed by a TV series in 2002, prompted a nationwide run on limes and crème fraîche. Her recipes aren’t the most adventurous, and they can be rather wordy, but they always work. I’ve adapted this one a little, and you can always increase the protein content byContinue reading “Caesar Salad”
