Roast potatoes

This recipe combines all the tricks I’ve picked up for getting crisp, fluffy roast potatoes, so if you are forced to compromise on one element you should be fine.

Hibiscus & pear trifle - a rather time-consuming but also rather stunning recipe by Thomasina Miers in the Times (Sat 28 May)
Whipped feta with roasted tomatoes - inspired by Mob Kitchen - forgot the garlic (oops)
Mushroom coconut laksa, loosely based on an Oddbox recipe - loosely, because bean sprouts and flat rice noodles were impossible to find, and the hungry household needed more protein.
